Happy Monday! Whether or not you celebrated Easter yesterday, I hope everyone had a great holiday weekend.

For me, yesterday was full of family, food, and a baby gender reveal (which obviously translates into “Best Easter EVER”). My big brother and his wife, Callie, are expecting their first little one in September. Before we dug into brisket, bacon green beans, and the rest of our delicious Easter lunch, they unveiled that we’ll be welcoming a new little girl into our family later this year. I’m so flipping excited to meet Piper, my niece, and you best believe I’ll be teaching her how to cook as soon as she’s old enough to hang with her Aunt Mackenzie in the kitchen! If any of y’all are superstar aunts, give me your tips. :o) I have no idea how this goes, but I’m thrilled about it.

Savory Stuffed Sweet Potatoes

Hellooooo, new dinner recipe! I feel like all I’ve been posting lately are either dessert recipes or things from muffin tins, so I’m breaking that pattern this week. I haven’t expressed my obsession with sweet potatoes enough through my blog posts, but we have a serious love affair. Fries, chips, tots, desserts, dinner rolls, caramelized, baked, stuffed — you name it, I can do it with a sweet potato. The funny part is that I absolutely despised these things as a child, and had I not started worrying about complex and low-GI carbohydrates last year, I probably still wouldn’t be familiar with the glory of the sweet potato. If you think you don’t like them, get over it, buy a big one from the grocery store, and try this recipe.

Alright, guys. Everyone who submitted an idea and entered the giveaway: WOW. The creativity blew my mind. I can almost guarantee that I’ll be spending the last few days of the year cooped up in my apartment cooking every single thing that was suggested. Thankfully, I have a few vacation days to use up before December 31. I’m banking on someone buying me new baking pans for Christmas, so I’ll need to break them in… Right? Right.
