Almond Crusted Tilapia


This is my favorite fish recipe in the history of fish recipes. It’s fabulous. Ryan deemed it the “best fish he’s ever eaten” the first time I made this.

This can be made healthier if you choose to bake it instead of pan-frying, but I usually don’t take that route because I can essentially trick myself into thinking this is a “cheat meal” during the week if it’s prepared as outlined by the recipe below. A little butter is okay — just don’t overdo it, and use reduced fat Parmesan if you have it. :)

Chocolate-PB Protein Pancakes


I have a problem with Sunday mornings and the chocolate/PB flavor combo. I always wake up wanting a giant stack of pancakes covered in butter and syrup, eggs, and hash browns, which would undo all of the hard work that I put in during my workouts from Monday-Saturday. Yesterday morning, I woke up with a similar craving.Thankfully, the Open Championship was on TV and Ryan wasn’t about to leave the apartment to go somewhere that wouldn’t have golf on, so I was forced into coming up with Option B. Mediterranean Stuffed Chicken Breast


I love creating stuffed chicken breast recipes, and I made this on the fly after looking in my fridge last night. They’re even easier when you buy the thin-sliced chicken breast — you just fold them over your filling instead of butterflying and stuffing a thicker piece. This is healthy (if you’re cautious about your portion sizing) and really flavorful. I served it with a steamed veggie medley (broccoli/cauliflower blend) and plain brown rice and it was delicious.
